Healthy breakfast recipes

These recipes add a healthy twist to the most well-known Indian breakfast recipes. That way, they become the perfect diet recipes to lose weight and are of course, extremely tasty, too.

Oats Idlis
Ingredients

  • Oats- 2 cups
  • Curd- ½ litre
  • Mustard seeds- 1 tablespoon
  • Urad dal- 1 tablespoon
  • Channa dal- ½ tablespoon
  • Oil- ½ tablespoon
  • Finely chopped green chilies- 2 teaspoons
  • Grated carrot- 1 cup
  • Finely chopped coriander- 2 tablespoons
  • Turmeric powder- ½ tablespoon
  • Salt to taste
  • Pinch of Eno

Directions

  1. Roast the oats in a tawa till they are slightly brown. Powder the oats in a mixer
  2. In a pan, heat oil and add urad dal, channa dal, mustard seeds and let them saute for a while.
  3. Add chopped coriander, grated carrots and chilies to this.
  4. Add some turmeric and fry
  5. Mix the seasoning with the oats powder. Mix in the curd till you get the consistency of idli batter.
  6. Do not add any water to the mixture
  7. Grease the idli plates and add the batter.
  8. Steam for 15 minutes.
  9. Poke the idli with a fork. If the batter does not stick, the idli is done.
  10. Serve with a chutney of your choice.

Dal Parantha
Ingredients

  • Wheat flour- 1 cup
  • Oil- 2 teaspoons
  • Salt- 1 teaspoon
  • Soaked moong dal- ½ cup
  • Cumin seeds- ½ teaspoon
  • Turmeric powder- a pinch
  • Asafoetida- a pinch
  • Chili powder- ½ teaspoon
  • Oil- 2 teaspoons
  • Salt to taste

Directions

  1. Knead a soft dough by adding water slowly to the wheat flour
  2. In a pan, heat oil and add urad dal, channa dal, mustard seeds and let them saute for a while.
  3. In a pan, heat oil and add asafetida and cumin seeds. To this add the cooked daal, chili powder, turmeric powder and salt.
  4. Stir till the dal mixture become dry
  5. Roll small rotis with the dough, fold in the filling and roll into paranthas.
  6. On a tawa, fry the paranthas till both sides are golden.

Ingredients

  • Low fat yoghurt- 1 cup
  • Garlic cloves- a couple
  • Juice of 1 lemon
  • Chicken breast, cut into chunks

  • Finely chopped cucumber- 1
  • Onion finely chopped- 1
  • Olive oil- 1 tablespoon

Directions

  1. Marinate chicken with garlic, lemon and yoghurt
  2. Leave it for an hour
  3. Grill the chicken till it is golden brown on the outside.
  4. In a separate bowl, mix the tomatoes, cucumber and onion along with some salt and olive oil. Serve it with a portion of the chicken to complete the meal.

Mixed vegetable and paneer subzi
Ingredients

  • Diced onion- 1
  • Chopped tomatoes- 2
  • Sambhar powder- 1 teaspoon
  • Red chili powder- 1 teaspoon
  • Garam Masala- 1 teaspoon
  • Coriander powder- 1 teaspoon
  • Turmeric powder- 1 teaspoon
  • Chopped French beans- 1 cup
  • Chopped mushrooms- 1 cup
  • Sliced capsicum- 1
  • Paneer- 250 grams

Directions

  1. In a pan, heat some oil.
  2. Add the onions and tomatoes and saute till tomatoes dry up
  3. Add all the dry masalas and mix well.
  4. Add the French beans and stir in a cup of water
  5. Cover and let the beans cook
  6. Add the mushroom and capsicum and let them cook well.
  7. Add the chopped paneer and cook for about 5 minutes
  8. Serve with fresh phulkas or rotis.

  • Murmura or puffed rice- 1 cup
  • Chopped onions- 1 cup
  • Chopped tomatoes- 1 cup
  • Mixed, soaked sprouts- 1 cup
  • Juice of 1 lemon
  • Imli Chutney- 1 teaspoon
  • Coriander and chili paste- 1 teaspoon
  • Salt and pepper to garnish

Directions

  1. In a bowl, mix the murmura with the onions, tomatoes and the sprouts.
  2. Add in the imli chutney and the green chili and coriander paste.
  3. Stir well and top this with lemon juice. Mix till the ingredients have combined well.
  4. Add salt and pepper and mix well.
  5. Serve immediately to enjoy the crunchy murmura.
