Simple saag paneer

This is a tasty and healthy lunch recipes for kids as it is melt in the mouth and is high in nutrients. It promotes better bone health and improves immunity.

Ingredients

  • Cubed paneer- 200g
  • Turmeric powder- 1/4 teaspoon
  • Extra virgin olive oil- 2 tablespoons
  • Chopped onion- 1
  • Minced garlic- 1 clove
  • Minced fresh ginger- 1 tablespoon
  • Garam masala- 2 teaspoons
  • Ground cumin- 1 teaspoon
  • Spinach- 2 large cups
  • Salt- per taste
  • Low fat yoghurt- 2 cups

Directions

  1. In a large bowl, toss the paneer and turmeric till all the cubes are coated.
  2. In a skillet, heat 1 tablespoon of olive oil on medium flame.
  3. Add the paneer to the skillet and allow it to turn brown on both sides. Transfer it to a plate and allow it to cool.
  4. In a saucepan, heat 1 tablespoon of olive oil and fry the onions, ginger and garlic till you get a fine aroma.
  5. Then add the cumin and garam masala.
  6. Mix in the spinach and salt and cook till the leaves are soft.
  7. Remove it from heat and toss in the paneer and yoghurt.
  8. Serve with chapatis or a side of brown rice.

Sprouts pulao

This is a favorite among healthy lunch recipes for work because it is not only easy to pack but also extremely healthy. It is high in protein and gives you enough fiber to keep you going for the rest of the day. This recipe has very little prep time as well and is therefore ideal for those who do not have enough time in the morning to cook lunch.

Ingredients

  • Boiled mixed sprouts- 1 cup
  • Cooked brown rice- 2 1/2 cups
  • Oil- 2 teaspoons
  • Cloves- 2
  • Asafoetida- a pinch
  • Chopped capsicum- 1/2 cup
  • Chopped spring onions- 1/2 cup
  • Chopped tomatoes- 1/2 cup
  • Finely chopped coriander- 1/4 cup
  • Turmeric powder- 1/4 teaspoon
  • Chili powder- 1/2 teaspoon
  • Coriander powder- 1 teaspoon

Directions

  1. In a broad non-stick pan, heat some oil.
  2. Add the asafoetida and cloves and saute for a few seconds.
  3. Add the ginger, capsicum, green chilies and spring onions. Saute for 2-3 minutes.
  4. Add the tomatoes and the dry masalas and cook it on a low flame for about 3 minutes.
  5. Mix in the sprouts, the cooked rice and salt. Toss it for about 2 minutes on medium flame.
  6. Serve it hot with chopped coriander and a side of yoghurt.

Chicken with cashew masala

If you are looking for a great family meal, this is one of the most favorite healthy lunch recipes at home. It is a healthy alternative to butter chicken which is otherwise made with heavy cream and butter. This recipe uses cashew as the base and therefore, is also rich in protein and omega- 3 fatty acids which improve your overall health.

Ingredients

For the chicken

  • Finely grated garlic cloves- 6
  • Peeled and minced ginger- 1inch
  • Plain yoghurt- 1 cup
  • Minced chili- 1
  • Ground coriander- 1 tablespoon
  • Kashmiri chili powder- 1 teaspoon
  • Garam masala- 1 teaspoon
  • Ground cinnamon- 1/2 teaspoon

For the sauce

  • Coconut oil – 2 tablespoons
  • Cloves- 4
  • Cinnamon sticks- 3 ( 2 inch)
  • Finely chopped onion- 1
  • Julienned chili- 1
  • Ground coriander- 1 teaspoon
  • Garam masala- 1 teaspoon
  • Kashmiri chili powder- 1/2 teaspoon
  • Tomato puree- 1 cup
  • Cashew butter (soaked and ground cashew nuts)- 2 tablespoons
  • Ginger garlic paste- 1 teaspoon

Directions

  1. Marinate the chicken with the above mentioned ingredients.
  2. Add some water if the dry masalas do not combine well.
  3. Then, cover it and refrigerate for 2 hours or 1 whole day.
  4. Once marinated, let the chicken come to room temperature.
  5. In a saucepan, heat some oil and shallow fry the chicken till it is fully cooked.
  6. In another saucepan, heat some oil and add the spices. Stir them till they are fragrant.
  7. Mix in the onion, chili, fenugreek, coriander, chili powder, garam masala and ginger garlic paste. Cook it for a few minutes and stir the tomato sauce in.
  8. Add salt, water and cashew butter. Stir it till the sauce is creamy.
  9. Mix in the chicken and cook for 2-3 minutes.
  10. Serve with chapatis or rice on the side.

Kichdi with sprouted moong

To make the masala mixture

  • Cumin and coriander seed powder- 2 teaspoon
  • Sugar- 1 teaspoon
  • Chili powder- 1 teaspoon
  • Grated fresh coconut- 2 tablespoon
  • Chopped coriander- 2 tablespoon
  • Asafoetida- a pinch
  • Salt to taste

Directions

  1. Wash and drain the rice
  2. Wash and drain the moong sprouts
  3. In a microwave safe glass, add the ghee and heat it in the microwave for 1 minute on high.
  4. Then add the rice, moong sprouts, asafoetida, turmeric powder and the masala mixture ingredients.
  5. Add 1 1/2 cup of water and covert lightly with a lid.
  6. Microwave it on high for about 14 minutes. Take it out of the microwave and stir it two times in the process.
  7. Serve it hot with a side of yoghurt.
